One of the reasons I like eating out is to explore ideas I would have never thought to make myself. I think this has been one of the exciting things about living in Sacramento- there are a ton of good restaurants. On one of our outings, we stumbled upon a pizza joint that was a bit surprising in taste (as the decor didn’t quite match). My husband and I both ordered this fig pizza with cheese (and prosciutto for him). It was amazing.
Ever since then, I’ll occasionally recreate it in flatbread form for a light dinner. It’s a sweeter pizza but I find the blue cheese really helps to balance it out. Look for fig jam near the specialty cheese section of a store. We also like to use fig jam on nut butter sandwiches!
Fig Jam Flatbread
A simple flatbread that can use homemade or store-bought fig jam as the base- perfect for a dinner party appetizer or light dinner.
- 1/2 recipe or store-bought pizza dough
- 3 to 4 tablespoons warmed fig jam
- 4 to 5 crushed roasted garlic
- 2 to 3 ounces shredded mozzarella
- 1/4 cup blue cheese
- 1/4 to 1/2 cup lightly packed vegetarian-friendly parmesan
- Preheat oven to 425˚F and cover a sheet tray with parchment. Alternatively, you could make this flatbread more like pizza (500˚F oven with a pizza stone).
- Stretch and roll out the dough to ¼” thickness on the sheet tray or pizza peel covered with cornmeal. Spread the fig jam over the crust then top with crushed roasted garlic and cheese.
- Bake the flatbread for 15 minutes or until the cheese is bubbling and browning.

Tips & Tricks: The inspiration for this flatbread comes with a drizzle of balsamic reduction which is delicious but I wanted to keep this flatbread super simple. If you have time, make a reduction and drizzle it on!
Also, you can find fig jam at some stores, usually near the specialty cheese. However, if it’s fig season, try your hand at making your own fig jam.

As I mentioned above, the original pizza is a similar concept with the addition of prosciutto and a balsamic reduction drizzle. I don’t deviate too much from the recipe above but I do occasionally like to bulk the pizza up with greens.
Greens: I like to add a bit of spinach to this flatbread or you can make these garlicky greens to use in place of the roasted garlic.
Alliums: Beyond roasted garlic, thinly sliced red onion or shallot would work well on this pizza. Or if you don’t have time to roasted garlic, thinly slice the garlic and pan fry until golden before adding to the pizza.
Grilled Cheese: I love these flavors on a grilled cheese sandwich too! Spread a thin layer of fig jam followed by mozzarella cheese and a sprinkle of blue cheese.
